I've started educating myself on Cloud since KubeCon. Can Mobile apps be considered Edge?

Edge computing is more on where you process and store your data. If you have any requirements (like low-latency, reduced network traffic, decentralized architecture) where it helps to have your data storage and processing on your mobile device (physically near to where data is created, the source), than your mobile app can be considered edge. So a mobile app in general is not edge, it can become edge based on how it handles data.

Interesting. Thanks. I'm constantly looking for the connections within the mobile space to cloud space. Going to keep studying Suse's book and come back with better questions.
