Protobuf or Avro... If using something Kafka compatible, there's confluent schema registry (or AWS glue registry) For discovery, it's not clear what you're looking for? Like Backstage Service Catalog? Linkedin WhereIs? Datahub? Governance would tie into whatever RBAC controls you have now.
